Blueberry Coffee Cake

Ingredients:

  • 1 1/2 cups sugar
  • 1/2 cup butter
  • 1 teaspoon salt
  • 1 teaspoon vanilla
  • 2 eggs
  • 3 cups flour
  • 1 tablespoon baking powder
  • 1 cup buttermilk
  • 3 cups blueberries
Topping:
  • 1 cup sugar
  • 1/2 cup flour
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • pinch salt
  • 1/2 cup butter
Cream butter and sugar in the bowl of a stand mixer.  Add salt and vanilla.

Add eggs, one at a time, mix well.

Add flour and baking powder, turn on mixer, while running add buttermilk.  Mix until combined.

Stir in blueberries.

For topping combine sugar, flour, spices and salt.  Cut in butter until texture is crumbly.



Pour batter into a greased 9" spring form pan.  Evenly sprinkle topping.  Bake at 350 for 75-80 minutes.
